Both of us are big fans of Browned Butter. Our Mom and Grandma both made browned butter, we sometimes had it with the first of the small potatoes boiled in their jackets. There is just something about the taste and aroma that is special. No wonder that it is again becoming popular. Here is the basic steps to make it and some recipes we use it in when we are just not serving it as a pour on for potatoes, fish, etc.
It can be made ahead stored in your fridge or freezer, you will have to warm it up to use. It is so easy to make that you are better making it when you need it.
How to brown butter
Put the butter into a light colored pan so you can see it as it changes color. Place the pan on stove with medium heat.
Allow the butter to melt, swirling the pan or stirring as it browns. Continue cooking the butter until it takes on a beautiful golden color. From the start of browning to perfect browned butter only takes a minute or two so watch closely once it starts to brown.
When your butter has reached that golden brown color, remove it from the pan—It’s important to remove the butter from the heat as leaving it in the hot pan or on the stove can push it over the edge from deliciously golden brown to burnt.
You can strain it to just get the brown butter or do as we do and use the darker milk solids that are on the bottom. Below are a few recipes using brown butter.
