Avalanche Cookies

Need a quick, easy treat in a hurry? If you do then this is a recipe for you. There are several versions on the internet all mostly alike or very similar to this one. I had everything to make them so on a cold rainy December day I spent a small amount of time making these. 
 I did add a little more cereal to the white chocolate ones just because I didn’t want them as runny as mine were, about a half cup. The chocolate ones were fine. I might have gotten a little more peanut butter in the first batch. 
 They really don’t taste like Rice Krispie Bars which surprised me, the chocolate makes the difference and the marshmallows are not melted but just stirred in whole. 
 Either of the chocolates worked well though my personal favorite was the Semisweet. I personally would classify these as candy not cookies but all the recipes I have seen call them No Bake Cookies.

Avalanche Cookies
Ingredients
2 cups crispy rice cereal (if you use GF cereal they would be GF)
½ cup mini marshmallows
1 pound (16 ounces) white chocolate or semisweet chocolate
½ cup peanut butter
Directions
Line two cookie sheets with waxed paper or parchment paper, set aside. Measure cereal and marshmallows in a large bowl. In microwave safe bowl, melt peanut butter and chocolate chips, watch closely as it only take a few seconds. Pour into bowl of cereal and marshmallows. Stir to coat all the cereal. Drop by tablespoon clusters on lined cookie sheets. Place in refrigerator or cool place till set up. Maybe stored in refrigerator or on counter in air tight containers.

  1. These where always one of the favorite items that I would make around Christmas but have also made them around Easter as well.
    Good idea to double or triple the batch cause they are addictive. Hubby has to have at least 2 in each hand for 'balance' as he puts it. :}

  2. SemiSweet or White Chocolate? My Grandson loves them as he is a huge fan of Peanut Butter Cups.
