Baking with Sugar...Candied Almonds


  I was tired of making cookies and candy so when Sue spotted this recipe for Candied Almonds on the internet, at budgetbytes I just had to try them.
  The blogger said that they were addictive, and she was right. I had made them for a almond nut fan and had to get them to him before eaten up. They really are hard to leave alone.
  Super easy to make and while nuts are not cheap, the rest of the ingredients are inexpensive. These are so good and easy to make that I will make them much more often. We are thinking that pecans would work well also, but the almonds are really, really good. I do hope you will try them and I sure am glad that the budgetbytes blog posted them. No serving amount as that will depend on how your will power is.
Candied Almonds
Prep time:10 minutes
Total time: 40 minutes
INGREDIENTS
1 pound shelled whole almonds
⅓ cup brown sugar
⅓ cup white sugar
1 teaspoon cinnamon
½ teaspoon salt
1 large egg
½ teaspoon vanilla extract
  Preheat the oven to 300°. In a small bowl, stir together the brown sugar white sugar, cinnamon and salt until well mixed.
Separate the egg white from the yolk. Place the white in a large glass or metal bowl and whisk until light and frothy, but not forming peaks. Add the vanilla extract and whisk again.
  Add the almonds to the egg whites and stir to coat. Add the cinnamon, sugar and salt mixture and stir to coat again
  Spread the sugar coated almonds on a baking sheet lined with parchment paper or foil coated with non-stick spray. Bake for 30 minutes, stirring once half way through. After baking allow the almonds to cool, the coating will solidify into a crunch shell.

    1. I have been watching the Texas weather reports. Sure sounds like it is not pleasant there. We are having a dry hot spell (for us that is) Don't think we have made 100 yet but close and it is only June. Your brother sounds like a lucky guy.
