Janice's Taco Tots

 


Looking for an easy recipe during these busy days during the holiday season?  Or for Football game days?  Here’s a family pleaser from my niece, Janice, who has a busy family with four kids at home.
Janice says this feeds her hungry family of 6 with no leftovers, so she doesn’t know if it warms up well or not!  Janice's mom, Bonnie, says this is delicious, as they had it at a family meal too.

TACO TOTS
Main Dish:
1 small bag Tater Tots
1 lb. ground beef
2 c shredded cheddar cheese
Toppings:
Salsa Con Queso
Guacamole
Black olives, drained
Diced tomatoes
Sour cream
Shredded Lettuce (not pictured here)
In greased 9x13 pan, layer bottom of pan with tots. Bake at 425° for about 25 mins. While those are baking cook meat, drain, and add taco seasoning. Take out pan pour meat over tots then top with shredded cheese. Place back in oven and bake another 10 mins. 
Take out and while still hot, drizzle the Salsa Con Queso, cheese, guacamole, and sour cream on top. Then sprinkle on the tomatoes, olives and lettuce. 
Use a pancake turner to serve. A spoon tends to mash the tots.

Janice says that when she increased the amount for company, "I used  4 lbs of a 5 lb bag of tater tots in a (I think) 12x17" pan. (The next size up from a 10x15" pan).  I also increased the meat to 2 1/2 lbs and used 4 c of cheese."
