French Apple Pie


Made the favorite Apple recipe today. This is the best apple pie you can make.
It comes from the first cookbook I ever bought for myself. Meta Given’s Modern Encyclopedia of Cooking new revised edition 1955. I have used these (set of two) till they are falling apart. If you ever find them at a book or yard sale, they are sure worth investing in. Anyway on to the recipe.
French Apple Pie
Streusel
3/4 cup flour
1/2 tsp cinnamon
1/3 cup packed brown sugar
1/3 cup cold firm butter
Filling
3/4 cup sugar
1 lb. 14 oz juicy tart cooking apples, Braeburn or Granny Smith are good.
Preheat oven to 450°.
Streusel: Blend flour, cinnamon. and sugar in medium bowl. Add butter and cut in with pastry blender or two knives until about the size of peas. Chill until needed.
Pastry and Filling: Line 9 inch pie plate with pastry and fit gently into pan. Flute edge to make a stand up edge.
Blend 1/4 cup of the sugar with 1 rounded Tablespoon flour. and spread over bottom ot the pie crust. Peel and core apples. Slice each quarter into 4 to five slices.
Arrange in pie plate. Round center slightly, Sprinkle the remaining 1/2 cup of sugar over the apples and sprinkle the Streusel over all. Put on a cookie sheet to catch any bubbling over and bake 15 minutes at high temp. Reduce oven to 350° and bake an additional 30 to 35 minutes. Pie should be bubbling gently and apples fork tender.
Granny Smiths will take a little longer to bake than Braeburn. If it is getting too brown lay a piece of foil lightly over top. Let cool before slicing if you can wait that long. It is really good warm with a scoop of ice cream though I prefer just pie.
This is with out a doubt the favorite of all the pies I bake.

  1. Thanks for joggin my memory of french apple pie. much easier and quicker than makin 2 crust for each pie. Cause when we have pie here it takes 2 and thas a lot o rollin crust.

  2. I just made this pie and it's perfect! Thank you for posting. My mother had this cookbook when I was growing up in Iowa. I would love to see the recipe in this book for cinnamon rolls that use the potato water! They were the best I've ever had and I no longer have access to the recipe.

  3. April, I just checked the cookbooks for the cinnamon roll recipe. There is a recipe that uses riced cooked potatoes, but not one that uses potato water. I wonder if your Mom just used potato bread dough. Our Grandmother used to do that when she baked bread. I have also, works well.

  4. Darn...let me check. I know I had to boil a potato and then pour off the water to use in the recipe and I know I got it from this book. Let me see what I can find out. My book is currently in UT and I'm with my mom in CA, she gave the book to me. Thank you so much for checking! I will send it to you when I find it, they are the very best I have ever made. Going to call home tonight and see if they can find it.

    Thank you so much for sharing this recipe. I received those cookbooks as a gift from my father. I loved them, read them, and cooked/baked from them. While I was at college, they were thrown away by accident when my parents were moving. They were so old and tattered, they probably looked like no one would want them.

    It was such a joy to find this on your blog. I look forward to reading more of your recipes, and cooking from them.

    Mine are old and tattered and the covers are falling off, they are still one of the cookbooks I look at first for a recipe.
    I have made this apple pie so many times over the years that I don't need the recipe anymore. I have seen them at book sales
    so keep your eyes open. I also think you might have some luck with the Half Price Stores if there is any in your area.
