Spiced Luncheon Meat

  The Southern Living The Low Cost Cookbook has a variety of simple and low cost  recipes. One that caught my eye was Spiced Lunch Meat. Spam is a favorite of my husbands and Bettie likes it also. This recipe calls for pineapple which is a very favorite food of Bettie's so I was in luck all around.
  I served this with home fried potatoes which we all like and mixed steamed veggies. 
The enamelware plate in the picture was one of my Grandmothers. I also have some of her bowls and treasure them. If you like spam, this is a good recipe to try.
Spiced Luncheon Meat
1 can Luncheon Meat
1 small can crushed pineapple
½ teaspoon cinnamon
½ teaspoon cloves
½ teaspoon nutmeg (opt.)
⅓ cup honey or maple syrup
1 Tablespoon cornstarch
  Slice the luncheon meat and place in a baking pan. Drain the pineapple and reserve juice. Place reserved juice in a saucepan and add the spices and honey. Bring to a boil. Mix cornstarch with small amount of water and stir into the honey mixture. Add the pineapple and spread over meat. Bake at 350° for about 20 minutes.
