Glazed Meat Loaf


  I had intended to make our usual meatloaf for supper and at the last minute did not have enough lemon for the recipe. Instead I got out the Ground Beef Cookbook and tried a recipe from it.
  As I had a pound and a half of ground beef to use, the recipe had to have that much ground beef, and some sort of topping.
  The result was this recipe for Glazed Meat Loaf. It was very good, easy to put together and I will use it to vary the menu. 
  I used V8 juice instead of tomato juice as that was what I had on hand. It worked quite well and we have enough for another meal. Hot meatloaf sandwiches are a favorite of Lyle’s. Bettie and I will just eat ours with out the bread. I like to have planned leftovers for the weekend when I don’t want to cook.
Glazed Meat Loaf
1 ½ pounds ground beef
2 eggs, slightly beaten
1 cup tomato or V8 juice
¾ cup rolled oats
¼ cup chopped onion
2 teaspoons salt
Dash of black pepper
Topping
3 tablespoons brown sugar
¼ cup catsup
¼ teaspoon nutmeg
1 teaspoon prepared mustard
  Mix all of the meat loaf ingredients with the ground beef. Shape into a loaf place in a 13 x 9 baking pan. 
  Mix topping ingredients and pour over meat loaf mixture in pan.
Bake at 350°F for 1 hour 15 minutes to 1 hour 30 minutes. Let stand about 5 minutes before slicing.

  3. I have a good recipe, but this topping is a bit different since I usually just add ketchup. I'm not a fan of meatloaf. I eat skinny slices off the ends & that is enough for me, but my husband loves it & slices the leftovers to freeze for lunch sandwiches. Thanks!
