From the Garden...Pickled Beets

The Deseret cookbook has common everyday recipes, many with a different twist. As we all like beet pickles and they are quite expensive to buy and a mess to make, even if you have a garden and fresh beets, I decided to try this recipe using canned beets instead of fresh. 
  I think these are maybe the best beet pickles I have had in quite awhile. They give the amount of cloves as optional, but I used it. We ate the whole can that day finishing them off by the end of supper. I am planning to keep a jar of them in the refrigerator at least once a week. 
  So easy, I just drained a 14 ounce can of sliced beets, our store brand, and used them for the beets. If you like beet pickles do try these.
Pickled Beets
  Combine in saucepan and heat to boiling:
⅓ cup white vinegar
¼ cup water
¼ cup sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ teaspoon ground cloves (optional) I used the cloves
  Add and simmer 5 minutes 2 cups of sliced and cooked beets 
  Chill

  1. I am going to try this. My Mother made the best beets I have ever eaten and I have never tried to can them because of the mess and everything involved but the store bought ones just don't taste good to me, so this may be my perfect solution! Thank you for all the great recipes.

    1. Lenora, We think these are close to the ones our Grandmother and Mother canned. I won't can them anymore because of the mess and because I have to buy them at our Farmers Market where they are expensive. Hope this works for you.

  2. I made beets only once from scratch. A giant mess I will never repeat! This sounds fabulous using canned beets! I am in a cast after foot surgery for at least 8 weeks but when I am up and around again I'm going to try these for sure!

    1. What a miserable time of the year to be in a cast. I hope it is not too hot where you are. The best reason for fixing these is less mess!
      Do be aware though that when you drain the can you will have some beet juice that will stain. I do mine over the sink.
      Hope you are out of that cast soon.

    2. Im not all that far from Iowa, in Central Illinois. Since I really cant do anything I'm comfortable with my foot elevated in the air conditioning. The biggest shame of all is wasting the whole summer. Thank you for the well wishes.

  4. Whoa - just found this great site. Got to try this recipe. We love beets.
    I see you mention Deseret Recipes a lot. I just bought their 1981 recipe book today for 25¢ at a thrift store. I found your site when I googled for Madsen's Dressing - not knowing it was also in the book.

    1. Well Hi HaroldS glad you found us. Yes, we like their book. You got a great buy for 25 cents. I paid full price for mine and consider it a good buy as I use quite a few of their recipes. Their lemon pudding cake is very good and one I now make often. Enjoy the book and we hope you enjoy our blog also.

  5. Thank you! I don't see "lemon pudding cake" in the book maybe you have a different issue? Or is that what is called Lemon cups? I've never done hot water baking, but my wife does that making custard. So I'll show her this one. We have a very prolific lemon tree so another great recipe to use lemons.

    1. Sorry about that, yes it is called Lemon Cups. I just got the book out again and checked the name. There are several recipes for this type of dessert in various cookbooks, but this one is simple, easy and very good. We enjoy it either warm or if there is any left it is also good cold. Hot water baking is easy to do though so maybe you should give it a try. I do envy you your lemon tree. This cookbook is coming up in a week in our cookbook reviews. The recipes we posted from it will be linked to the review.
