Cooking with Shortening...Baked Hush Puppies


  
This recipe for baked hush puppies from the Quick and Easy cookbook by Southern Living was an instant hit at our house.
  Like the title of the book says, it was quick and easy. Everyone thought they really were more like mini corn muffins than hush puppies, but so good and so much better for you. My daughter thinks they should be white cornmeal instead of yellow but yellow is what I had on hand. To our Southern readers, does it make a difference? Taste, or just the appearance?
  I used my 24 cup mini muffin pan and greased them well with Crisco. They took about ten minutes to put together and 15 minutes in the oven and no greasy mess from frying them. I used my 1 tablespoon cookie scoop to put them in the pan and that went quite fast. I didn’t quite get 24 so put water in the three empty cups so my pan would not warp. If you have some left they freeze very well.
  Folks, if you like hush puppies this is a really good way to go. My grandson, who is my biggest hush puppy fan, gave them 2 thumbs up, so will make them often.
Baked Hush Puppies
½ cup cornmeal
½ cup all purpose flour
½ teaspoon sugar
1 ½ baking powder
½ teaspoon salt
Dash cayenne pepper
⅓ cup milk
1 egg beaten
¼ cup finely chopped onion
2 tablespoons melted shortening 
  Combine dry ingredients; add remaining ingredients and stir only until blended. Place about 1 tablespoon batter into well greased 1 ½ inch mini muffin pans. Bake at 425° for 15 to 20 minutes.
YIELD: about 24

    1. So do I, sadly being Celiac I no longer eat them. The Grandkids sure like them however.

    2. I am not celiac, but gluten sensitive. I substitute for wheat by using corn flour (called masa in the baking aisle) or rolled oats (ground in my spare coffee grinder). I have been very satisfied with the results and hope it will help you enjoy some of those foods that you are missing.

    3. Thanks for the info. I haven't tried Masa yet though I do use oatmeal though I need to be sure it GF as not all oatmeal is. Mostly I just skip eating the types of foods that need to use a large amount of wheat flour or the other grains with gluten.

  2. love them hush puppies.
    I use the basic recipe but also add diced up red and green bell pepper and then for son-in-law and grandson I gotta add diced hot peppers to the mix.
    I do bake my cornbread in cake pan; cut into squares instead of muffin pan. Once they come right out of the oven I do drizzle honey over the top of the hot cornbread.

    1. The peppers sound good, but not the hot ones. I like my cornbread baked in a pan instead of muffins also. That is how we had it as kids and how I have always made it. Honey on top is good or Sorghum. Now I am hungry

  3. My husband & son would just adore these, I'll bet. Both love hushpuppies, but I don't like to deep-fry anything (ugh, the mess!). I am going to use gluten-free flour in place of the regular, and see if I can't make these both tasty AND gluten free! Maybe I'll throw in some green chilis or jalapenos as well...

    1. Keep in mind that these are not quite the same as they are not deep fried. If you use GF flour let us know how they come out.
