Saturday Thoughts...Forgotten Vegetables? Beets

We were enjoying one of our favorite lunches, Chicken Saucepan Casserole with buttered canned beets.  My husband commented how sweet and delicious just buttered beets are, and how his mom often fixed them.  We both think they are an underrated vegetable.  Beets are a source of antioxidents, manganese, folate, and vitamin B2 and potassium.
If you haven’t had cooked beets for a while, here is a recipe for canning your own, and some recipes to use them besides as a simple vegetable side dish.  All of the recipes use the beet juice too, so nothing good is wasted.

  1. I've tried to eat beets several times thinking it was just a kids thing that I did not like them. I still don't. I guess they are an acquired taste.

  2. Hi! I'm glad I ran across your blog today as I was searching for old fashion recipes. I love beets but it seems like the only way I see people eating them these days is in a powdered form. We love pickled beets at our house, but I'm anxious to try some of these recipes...nice to meet you!

    1. Glad to hear from you Barb. We enjoy old fashioned recipes too...Grandma knew a thing or two about nutrition, not wasting anything, how to produce the food you eat and how to make almost anything taste good.

  3. Are canning lids (flats) available in your area? Here, we can only buy them in a set w jars and rings included.

    1. Yes, we can buy bulk lids at the Amish stores...they are Ball commercial lids. This week you could buy one tube only of regular lids...$22.95 for 116 lids.
      2 years ago I could buy the same lids for $56.95 for 345 with no limit. They are heavier and have more mastic than the ones you buy with jars. I usually keep 300 or so on hand as I can meat and beans, etc. in the winter and fruit and vegetables in season. It's 70 miles to our nearest store like that so I keep stocked. A blessing last year!
