Meatballs and Sauce


This is a good, basic meatball recipe that is less expensive than using purchased spaghetti sauce and just about as easy.  It’s not gourmet - it’s like Mom used to make, and they are good.  Use a nice, large frying pan so you don’t crowd your meatballs.   
Meatballs and Sauce
  1 1/2    Pounds  Ground Beef
     2/3    Cup  Milk
     3/4    Cup  Oatmeal
     1/4    Cup  Onion -- chopped
  1           Teaspoon  Salt
     1/4    Teaspoon  Pepper
  12         Ounces  Tomato Paste
  1           Cup  Water
  1           Teaspoon  Oregano or Italian Seasoning
  1           Teaspoon  Salt

Mix beef, milk, oatmeal, onion, salt and pepper.  Shape into 16 balls.
Brown in a small amount of oil and drain.  Combine remaining ingredients and pour over meatballs.  Simmer over low heat 30 minutes (covered).
**Cooked, leftover rice can be used instead of oatmeal.
Serve with spaghetti or rice, topped with a little Parmesan.
