Grilled Chicken Recipes on an Indoor Contact Grill

There isn’t any better way to get juicy grilled chicken than in an indoor contact grill like a George Foreman.   It’s so fast to cook, with no big mess.  You do need to have your side dishes ready to go, because you won’t have time after you start grilling.  Just about any marinade or even seasoning salts work well; whatever you like.  Your outdoor grill recipe will take half as much time on an indoor contact grill because you’re grilling both sides at once. 
Chicken really calls for using your instant read thermometer to be sure it is done enough for food safety, but not overcooked.    Check in the thickest part of the meat; it needs to be 165°.             

 Easy Foreman Grill BBQ Chicken Thighs
  2         5 or 6 oz  chicken thighs, skinned and boned
  2         tablespoons  molasses
  2 1/2   tablespoons  ketchup
  1         tablespoon  red wine vinegar
     3/4   teaspoon  light brown sugar
     1/2   teaspoon  Liquid Smoke (I don't bother)
     1/2   teaspoon  smoked paprika

Mix all ingredients except thighs in a baking dish. Be sure to mix well for couple of minutes so all ingredients blend together and sugar dissolves.  Open thighs flat and pound to equal thickness, about 1/2-3/4" thick. 
Add thighs to the sauce.
Let sit for an hour covered in the fridge for even more flavor.
Preheat your Foreman Grill for at least 5 minutes. Use high setting if your grill has it. Grill thighs for at least 3-4 minutes and check for doneness (165° on instant read thermometer).

Chicken Tenders in Champagne Vinegar Marinade
     1/2         pound  chicken tenders -- (or use regular chicken breast cut to size)
  1         tablespoon  lime juice
  1         tablespoon  extra-virgin olive oil
  1         tablespoon  Champagne wine vinegar (or white wine or cider vinegar)
     1/2   teaspoon  honey
     1/3   teaspoon  dijon mustard
             dash  dried oregano
     1/3   teaspoon  garlic -- minced

Mix in measuring cup, add to ziploc bag with chicken tenders. Marinate for as long as you can. If you can let them marinate overnight they will be best. But even for a few minutes and you'll still get tasty tenders.
Preheat your grill for at least 5 minutes with the lid closed. 
Add marinated tenderloins and close lid. Grilling time will be approximately 3-5 minutes depending on thickness. Be sure to check for doneness and internal temperature of 165F.

    1. I don't have one either, but think I am going to buy one, Sue is having way to much fun with hers. I have had an indoor grill but it was open and was just a pain to clean up after. This looks like it would be so much better. Sometimes those younger sisters do know what they are talking about.
