Cookbook Reviews...Delicious Desserts Made Easy


  Eagle Brand sweetened condensed milk has been on the market for more than 125 years. I have used it all of my cooking life. I think it is just as popular now as it was when it was first introduced. 
  While it has various uses, I think that desserts are the most common. This cookbook Delicious Desserts Made Easy published in 1981 by Borden Company has many of the most popular recipes in it. I bought it new and as you can see, it is really well used.
  We have featured recipes from it and I guess I would have to say that the ice cream recipes are the ones that both Sue and I liked the best. There are some good pie recipes, their lemon pie and pumpkin pie are both excellent. There is also a good recipe for fruitcake. If you run across one at a book sale or garage sale, this is a fun cookbook to own.

  1. I have that same booklet and I think at one time or another over the years that I have made every recipe. Between the Lemon Chiffon Pie and the Cherry Cheese Pie are hubby's favorites.
    Pm the cherry cheese pie I don't put on the cherries until the pie is dished up on a plate; only then will I top it off with the cherry pie filling.
    The Ever-So-Easy Fruit Cake I didn't care so much for but then I'm not a big hand of Fruit Cake. (I'm not a big cake eater unless it's cheese cake )

    1. Hi Colleen, It s a good booklet isn't it. I must admit I am not a fan of fruit cake so don't make it myself. However some of my family will eat it and this makes an easy one to bake.

  2. I don't have the book, but my mother-in-law's recipe for lemon pie used a can of Eagle Brand. I much prefer it to lemon pies made with cornstarch. Also, during WWII and possibly during the Depression, families used to slowly simmer an unopened can of condensed milk. When cooled and opened fully, it had solidified and was similar to custard, I'm told. Of course, that's if it didn't explode during the process!

      I have simmered Eagle Brand in the can and used it for caramel filling, I haven't tried the custard though I have heard of it.
      You have to watch closely that the can is covered with water and I don't do it any more because it can explode.
